No introductions are needed for this highly treasured food that dates back to 2000 BC. At that time, the Maya from Central America, the first connoisseurs of chocolate, drank it as a bitter fermented beverage mixed with spices or wine. Today, the long rows of chocolate squares sitting neatly on your store shelves are the end result of many steps that begin as a cacao pod, larger than the size of your hand. Seeds (or beans) are extracted from the pod and fermented, dried, and roasted into what we recognize as cocoa beans. The shells of the bean are then separated from the meat, or cocoa nibs. The nibs are ground into a liquid called chocolate liquor, and separated from the fatty portion, or cocoa butter. The liquor is further refined to produce the cocoa solids and chocolate that we eat. After removing the nibs, the cocoa bean is ground into cocoa powder that is used in baking or beverages.
According to Harvard University, a systolic pressure under 120 (the first number) and a diastolic pressure under 80 (the second number) is considered normal. Hypertension, or high blood pressure, is indicated by a systolic pressure of 140 or higher and/or a diastolic pressure of 90 or higher. Before and during the challenge Herbert had normal numbers and there was no reason for concern.
Elevated blood glucose harms blood vessels. Blood vessel damage is the major cause of the vascular complications of diabetes, leading to other problems, such as damage to blood vessels in the brain and eyes causing retinopathy. Studies of long-term diabetics show progressive brain damage leading to deficits in learning, memory, motor speed, and other cognitive functions.
The body can cope with some free radicals and needs them to function effectively. However, the damage caused by an overload of free radicals over time may become irreversible and lead to certain diseases, including heart disease, liver disease and some cancers (such as oral, oesophageal, stomach and bowel cancers). There’s still debate over which antioxidants may offer help preventing or treating diseases when consumed in concentrated dosages. Some research has shown that antioxidants like lutein and glutathione may be beneficial when taken in supplement form — for example, in preventing vision loss, joint problems or diabetes. But other research doesn’t always show the same results and sometimes even that certain supplements like vitamin A or vitamin C may be harmful in high amounts.
In early humans, this stimulus helped lead them to calorie-rich foods, which aided survival when food was scare. But now this primitive drive contributes to our epidemics of obesity and diabetes. The behavioral and neurobiochemical characteristics of substance abuse and overeating are quite similar, and the idea of food addiction is gaining ground among scientists.
The research is piling up that soda is bad for your brain, as are other added sugars. An animal study from Oregon State University found that a high-sugar diet led to cognitive impairments, including memory problems. And a UK study recently found the “tipping point” at which blood sugar negatively affects the progression of Alzheimer’s. “Excess sugar is well known to be bad for us when it comes to diabetes and obesity, but this potential link with Alzheimer’s disease is yet another reason that we should be controlling our sugar intake in our diets,” study author Dr. Omar Kassaar of the University of Bath said in a press release.
